I found a few decent ones, following the method you suggested. Does anyone know where on the hard drive these maps are saved to? Or does it download it everytime you join the server?

| If you want to host using those maps, you can download every assault map for ut2004 from http://uz2.gameservers.net/ut2004/. There's well over 30 different ones there, some amazing ones too, but they're in .uz2 format.
use the UCC -decompress <path&filename> at the command prompt from the ut2004\system directory to be able to use them.

| If you look under the ut2004\system directory, you'll find a program already there called UCC.exe. I made a mistake before, the proper command line is 'UCC decompress <filename>' there's no '-' before decompress.

In Unknowncube, you navigate either a Raptor or a Spacefighter through a giant cube filled with glass tunnels, seeking to destroy its core. Be sure to watch out the moving blocks in the tunnels, for they can instantly kill. To achieve the first couple of objectives you must be using a Raptor because you can't eject from a Spacefighter to lower switches.

TempleOfTrials is really good; in fact one of my favorites. Its a non-combative assault map in which you must pass through six tombs (in version 3), ranging from easiest to hardest, filled with obstacles. Its going to require all the skills you need to pass through all the tombs.
